Stuffed Baked Pork Chops
For all you meat lovers out there (like me), here is a little recipe I love to whip up… stuffed baked pork chops.
I actually made this for dinner last night… yum! However, I didn’t snap any pictures, so you’ll have to use your imagination.
Ok, here is what you you’ll need for the recipe. Feel free to make substitutions as needed:
Needed Ingredients:
- 4 to 6 lean pork chops
- 4 to 6 cups stuffing mix (Stove Top)
- 2 cans Campbell’s cream of mushroom soup
- 1 cup milk or water (milk makes it richer)
- Aluminum Foil
- 13 x 9 inch baking dish
Preheat over to 350 degrees.
Prepare stuffing mix according to directions on package. With Stove Top, this takes about 5 minutes max and tastes really good.
Take about 1 cup of prepared stuffing and put on top of each pork chop.
As an alternative you can cut a slit down the side or middle of the pork chops to make a small pocket so you can “stuff” the stuffing into the pork chop. This is how I like to do it.
Place the pork chops in a 13 x 9 inch baking dish.
Mix together cream of mushroom soup and milk. Pour carefully over pork chops and stuffing.
Cover the pan with aluminum foil. This helps brown and cook the pork chops.
Bake at 350 degrees for 60 minutes.
Remove from oven and let stand for 5 minutes.
Be careful when removing the foil as I nice heat cloud will come out and burn your face or hands if you’re not careful.
Place pork chops on plate and serve. Enjoy!
Triscuit Pizzas
About halfway through my work day I always get a craving for something tasty, you know, a little afternoon snack. I’m sure you do too.
One of the things I like to make with ingredients most already have on hand and only takes about 5 minutes total is Triscuit pizzas.
Yes, you heard right, Triscuit pizzas.
These could also be a late night snack or for the bachelor in you, breakfast , so don’t think these tasty treats are just for your mid afternoon hunger cravings.
Ok, now for what you’ll need for the recipe:
Needed Ingredients:
- Triscuit Reduced Fat Crackers
- Prego Italian Sauce (Traditional)
- Shredded Mozzarella Cheese
You’ll also need a microwave (or toaster oven), a spoon and either a plate (microwave safe) or a small metal pan (toaster oven safe).
Now that you have your needed supplies, lets get this party started.
First grab 10-20 Triscuit crackers and place them on a microwave save plate:

It works really nice if you have a semi flat plate so the crackers lay out nice and… you guessed it, flat
Next take a spoon and spread some Prego sauce on each cracker. Feel free to add a little or a lot depending on your tastes:

Now that you have the sauce on all your crackers, it’s time for the mozzarella cheese… yum-o as Rachael Ray would say.
Take a few handfuls of the shredded mozzarella cheese and place all over your Prego sauce covered Triscuit crackers like so:

Now comes the fun part… nuking all of our Prego sauce and mozzarella cheese covered Triscuit goodness.
I suggest approximately 60 seconds or 1 minute in the microwave depending on your power settings.
The end result:

Be careful as they will be very hot, so let them sit for maybe 30-60 seconds then dig in and eat.
Repeat as desired.

Hacking The Body Week #7
Good evening everyone, it’s time for my weekly hacking the body update.
I would have updated sooner but I’ve been away from my laptop most of the day, however I did weigh in this morning and wrote it down on a post-it note before I left.
This morning after I showered, I jumped on the scale and to my amazement, I weighed in at 225.4 which means I’m down 1 pound from last week.
Why am I surprised to have lost any weight?
Well I’ve been sort of bad the past week eating junk… yes folks, the pie sale at the local bakery got the best of me. I’ve been having breakfast pie every morning… yum… lemon meringue.
Before you bust my chops for eating pie for breakfast, to make up for it, I’ve been walking more, running around with my dog and of course drinking a lot of water to flush my system out.
Encase you were wondering, the pie is now gone, so no more breakfast pie for me.
I’ve also been going to bed much earlier and also waking up sooner. It’s amazing the things you can get done before the sun comes up.
This evening before I arrived back at home base, I got myself a 24 hour membership to the gym, which means I can now get going on the treadmill and LifeCycle and get a really good cardio workout.
The best part about my stop at the gym before heading home?
The membership was free. It’s nice having friends in high places
Ok, to sum up my weekly progress, so far in 7 weeks I’ve lost a total of 6.6 pounds. Not too bad… it’s been slow going but I am making progress.

Hacking The Body Week #6
Happy hump day, you know, Wednesday being the middle or hump of the week… it’s time for my weekly update on my weight loss Hacking The Body progress.
I’ve got some bad news folks. I haven’t lost one single pound this past week, however I didn’t gain any weight either.
The one thing I did notice this week is I’ve lost close to one inch around my waste, so I needed to notch my belt to hold my pants up… so even though I didn’t drop any actual weight, I did shrink around my mid section, so that’s a positive thing.
Lets see, I’ve stuck to drinking a lot of water and now only have one soda every other day, so I’m very close to giving it up completely.
Ok, now for the specific details of my morning weigh in… I weighed in this morning at 226.4 which is the same as last week.
So far in 6 weeks I’ve lost a total of 5.6 pounds. I’m sure next week will show some actual weight loss.

Hello Geek With Laptop readers, it’s time for my weekly update on my weight loss Hacking The Body progress.
As with the previous weeks, I’ve stuck to drinking a lot of water and only having one diet soda per day.
I’m tempted to try again giving up soda completely again to see if my body plays nice this time.
My pants and shirts are becoming loose around my waist line… yay more visual signs of weight loss progress.
Now for the specific details of my morning weigh in… I weighed in this morning at 226.4 which is a 1.2 pound weight loss from last week.
So far in 5 weeks I’ve lost a total of 5.6 pounds. Gold star for me. w00t.
